STUFFED CHICKEN BREAST
Time Required: 1 hour
Serves 4

INGREDIENTS
4 large La Ionica chicken breasts
50g cooked and squeezed spinach
16 sun-dried tomatoes
150g of mozzarella cheese cut into strips
(10cm by 1cm)
50g mixed lettuce leaves
Dress with your favourite
Italian dressing

METHOD
• To prepare the chicken, cut a pouch into the breast taking care not to slice all the way through.
• Divide the mozzarella, spinach and tomato into four and stuff into each breast.
• Coat the breast in olive oil, and season with salt and pepper.
• In a shallow pan add 1 tsp of oil.
• When hot - add the chicken breast and colour until golden brown.
• Place breasts on a baking tray.
• Bake in moderate oven 180°C for approx 15-20 mins
• Allow to rest for 10 minutes then slice in half and place on a bed of mixed lettuce leaves.
• Add dressing to season.
