THE PERFECT ROAST CHICKEN
Time Required: 2 hours
Serves 4

INGREDIENTS
1 La Ionica chicken, size 16
1.5kg baby potatoes
2 medium red onions cut into halves
2 red capsicums cut into slices
300g green beans
1 large bunch of baby carrots, peeled
3 garlic cloves, crushed
2 sprigs of rosemary
1 lemon, cut in half
50mls olive oil
Salt & pepper

METHOD
• Pre-heat oven to 180°C. Firstly, wash and dry the chicken.
• Then massage the salt, pepper, oil and a little lemon juice into the chicken skin.
• Really work it in all over the chicken for 2-3 minutes.
• Place the rosemary, garlic and lemon halves into the chicken cavity and tie the legs closed.
• Place on a roasting tray.
• Brush the baby potatoes, carrots, red onions and capsicum with a little oil and add to the roasting tray.
• Place tray in oven.
• Roast for 11/2 hours, basting and turning the vegetable to cook evenly.
• (As soon as vegetables are cooked, remove from the roasting tray and keep warm.)
• Steam or microwave the beans until tender. Serve.
