CHICKEN CLUB WRAP
Time Required: 30 mins
Serves 6

INGREDIENTS
6 bacon rashers
1 ripe large avocado, seeds removed, roughly chopped
1/2 cup good-quality mayonnaise
2 teaspoons lemon juice
1 barbecued La Ionica chicken, flesh roughly shredded
30 semi-dried tomatoes
1/4 iceberg lettuce, washed, trimmed, shredded
6 lavash or tortilla wraps

METHOD
• Place the bacon in a large non-stick frypan over medium heat and cook for 5 minutes or until crisp.
• Remove and roughly chop.
• Place the avocado, mayonnaise and lemon juice in the bowl of a food processor.
• Season with salt and pepper, and process until the mixture is very smooth.
• Divide the bacon, chicken, tomatoes and lettuce between the lavash wraps.
• Spoon the mayonnaise mixture over the top, and roll up to enclose the filling.
