CHERMAULA MORROCAN MARINADE
Time Required: 1 hour
Serves 6
Marinate approx. 2 kg La Ionica chicken

INGREDIENTS
2 kg diced La Ionica thigh or breast chicken.
1 cup natural yoghurt or 250g tinned crushed tomatoes
4.5g cumin seeds, roasted and finely crushed
15g coriander seeds, roasted and finely crushed
25g sweet paprika
15g ground ginger
2 cloves garlic, roughly chopped
2-4 whole chillies, de-seeded scraped and roughly chopped
2 lemons, juiced
100 mL olive oil
1/2 tsp pepper and salt

METHOD
• Place all ingredients into a food processor and blitz until garlic and chillies have been ground to a paste.
• To vary the heat, add tomatoes or yoghurt or some of each.
• Tomato is good for marinating fish and is particularly popular in Morrocan.
• Yoghurt is good with Lamb, Chicken or Beef.
• Marinate 2-3 hours before cooking.
• Thread meat on to wooden satay sticks that have been soaked in water for 10-15 mins or use stainless steel skewers. Coat in marinade and chill.
• Cook on grill or barbecue.
