
THE PERFECT ROAST CHICKEN
Time Required: 1 hour
Serves 6
INGREDIENTS
1kg La Ionica whole chicken, breasts,
thighs or even chicken wings
Marinade:
1/2 tsp paprika
1/2 tsp cumin
1/2 tsp cayenne pepper
1/4 cup lemon juice
1/4 cup olive oil
2 tbsp soy sauce
1/2 tsp sugar
1/4 tsp pepper
METHOD
• The best way to cook chicken on the bbq is to first oil the grill and char the chicken skin side first to create the flavour and pattern.
• Then move the pieces over a spot with no heat underneath.
• Add all the marinade mix into a bowl. Stir well, then add the chicken and coat.
• Leave for no less that 2 hours before cooking (even better left overnight).
• Drain off marinade and reserve.
