The key quality factors of a La Ionica chicken are:
1. Skin on the bird – it has texture and it’s firm whilst still moving freely around the meat itself.
2. Feather marks – Look for the marks where the feathers were on the bird, as this mark demonstrates the care in processing, and the bird has not been badly treated with overheat.
3. Shape of the bird – good muscle structure on a firm/plump bird.
4 . When purchasing chicken breast – look at the natural pink flesh. The texture of the raw flesh again is firm, and all the moisture stays within the meat.
